Today is Cinco De Mayo a perfect reason to make tacos, right? Not that I need a reason to make or eat tacos, but I’m super excited to share this easy Shrimp Taco Recipe with you! I’m also excited because this is my first time sharing a recipe on my blog! ๐ If you’ve been following me for a minute then you know I love Trader Joe’s. Since I had to do my weekly grocery shopping today I figured why not make this recipe using all TJ’s items!
First things first I chopped up a whole green bell pepper & a half of a shallot. I love shallots better than regular onions because in my opinion the flavor just pops. After chopping them I add them to a pan with Extra Virgin Olive Oil on medium heat.
After I unthaw the shrimp and drain the excess water from them I season them with TJ’s taco seasoning & Cuban style citrusy garlic seasoning blend. This was my first time using the citrusy garlic seasoning & I must say I like it. I add the shrimp to the pan of bell pepper and shallots. I chopped some fresh garlic to toss in there as well.
While that is simmering I decided to make the slaw. I don’t like sour cream nor plain mayo. I thought about using Miracle Whip but I considered that might be too sweet so I decided to use Crรจme Fraรฎche. I don’t know why I thought to use that. I guess I call myself being fancy lol! I purchased a bag of organic shredded green and red cabbage. I put that in a bowl with a dollop of Crรจme Fraรฎche, fresh squeezed lime juice, minced garlic and cilantro.
Once the shrimp were done I scooped them out & added the bag of frozen spicy cauliflower rice to the pan with some butter. I picked this rice up on my 23 Best Trader Joes Frozen Foods shopping trip. I didn’t post it on there because I hadn’t tried it yet. So now I’m giving my review on it. It does have some heat to it because of the jalapeรฑos. I normally don’t eat spicy foods, however, this wasn’t overly spicy. So I could handle it.
I had my oven turned on at 400 degrees and placed the corn tortillas in for about a minute or two. Next is the finale… assembling the tacos. I put the shrimp and pepper mixture on the tortilla first, then the slaw, and topped it off with fresh cilantro, chives, Mexican style cheese blend, tomatillo salsa & pico de gallo. That’s it! I hope you get a chance to try these yummy tacos. They are so quick and easy AND your taste buds will love you lots! ๐
